Mushrooms lend themselves to many preparations in the kitchen; in addition to being cooked fresh, we can use dried mushrooms so that they can be enjoyed all year round. How to dry mushrooms, useful information
- Collect the mushrooms when the weather permits: they must be dry when harvested
- After having collected them, have them checked by the competent mycological office. The article "Go mushrooming" may be of interest
- Allow only the firmer, intact porcini mushrooms to dry, free from damaged parts and parasites and immediately cook those that do not meet these requirements.
- Dry both in shady places and in the sun, it is important that there is no rain or humidity
- In order to avoid losing their indisputable aroma, never wash them, just clean them carefully with a clean cloth and a soft brush, so that all the soil goes away.
How to dry mushrooms, the procedure
- After having thoroughly cleaned the mushrooms, cut them into thin slices and arrange them on a trellis or a tray, preferably of wood or wicker, (previously covered with kitchen paper or parcels), without overlapping them and leaving space between them.
- Avoid newspaper as printing ink can be toxic and harmful to health
- Choose a rather ventilated place but sheltered at the same time: at night and in case of bad weather, the trays must be brought inside the house
- Cover the dried mushrooms with gauze to avoid unpleasant insect visits and turn them at least every two hours
- When they are completely dry, store the mushrooms in paper-lined tin boxes or bags, always made of paper with airtight closure
How to dry mushrooms, use and conservation
- Before consuming them, soak the dried mushrooms in warm water to soften them then drain without throwing away the water as it can be added to sauces and dishes
- Consume dried mushrooms after 40 days
- Store within one year of drying
As an alternative to trays, mushrooms can also be dried strung on a thin string and then hung, as in the case of chillies.
